5. FOOD

My friend Chloe Coker- a talented lawyer turned published health food cook will be providing the delicious offerings for the weekend. Chloe runs her own cookery school and courses in West Sussex. Chloe creates yogi magic in the kitchen- infusing love in to all we eat. We use with some of Pickforde’s home grown veggies and using nearly all organic produce where possible. We will be VEGETARIAN & mostly WHEAT FREE.

We DO NOT use onions, garlic and nightshades (tomatoes, aubergine, white potato, bell peppers as these can aggravate inflammation in the gut and system overall). We DO USE fresh UNPASTEURISED/RAW ORGANIC GOAT or COW MILK from our local farmer to make paneer and for the evening “nighty night” cap drink. We DO NOT use any REFINED SUGAR- only natural sweeteners like dates, raw honey, maple syrup (all in moderation).

MEAL STRUCTURE:

I am an Ayurvedic Health Counsellor and treatment therapist. I have drawn deep inspiration from the principles of Ayurveda and integrated them into my western way of life. I have designed these meals and the timings to work with our circadian rhythm (which is in line with the principles of Ayurveda). This means eating in a way that our body and mind can best digest and build health on all levels. The body’s digestive capacity is like the sun in the sky – it is at its strongest around midday-2pm and weakest early mornings and after 8pm this time of year.

8.30am – Breakfast (light)

12.30pm- Lunch (main meal)

5.30pm – Dinner (lighter meal)

8pm- Evening night cap to aid sleep:).
